The founder of the company settled in Maitland in southern Australia. At first, the founder of the company worked for other bakers. Nevertheless, in the 1850s he embarked on following the gold rush that enabled him to set up a bakery business in the mining regions. With money got from this business, William was able to return to Maitland and started his first bakery business. In the early 1860s, Maitland was destroyed by floods hence William moved to Newcastle where he started a business in a rented space. Therefore, William was able to supply biscuits for the shipping industry in Newcastle.
